Generously cut into perfert yakiniku size, Kagoshima Wagyu are known for their well balanced marbling and tenderness. More than 20% of Japanese Wagyu are imported from Kagoshima, the prefecture which is home to the highest number of Japan livestock. As the meat cooks, it is this marbling, also known as intramuscular fats, that melts and infuses the meat with a rich and nutty flavor while keeping the meat tender and moist.
To indulge, simply season with salt and pepper before lightly grilling to your liking.
