Hamachi Kama (はまちのカマ) is yellowtail collar located just above the gills and below the head. It is the fattiest part of the fish, making it naturally juicy, preciously available in small qty with only two located in each yellowtail (one per side).

Usually the Hamachi is grilled or deep fry till the skin is crisp and the thoroughly cooked through. Then the flesh will be so soft that it can be easily scrape off the cartilage with a fork or chopsticks
